Menus at Tiziri

When we were planning menus at Tiziri Camp we were determined to make mealtimes more interesting for our guests and whilst we wouldn’t go so far as to declare it a Tagine Free Zone – we wanted to introduce some variety and excitement about meals in our camp restaurant – Aghlay.

The guidelines we have implemented as very serious goals at Tiziri are:

  • all ingredients should be locally sourced and therefore seasonal
  • we should create zero food waste
  • we should offer exciting vegetarian & vegan options
  • guests should be so impressed that they ask us for the recipe

Vegetarian and Vegan

In addition to our standard menu choices, here are some examples of the new vegetarian & vegan dishes being created in our kitchen.

  • Courgette and Goats Cheese Dumplings
  • Aubergine Caviar
  • Quinoa Stuffed Vegetables
  • Shakshuka, Charmoula & Pumpkin Rissoles
  • Quinoa Pates with Kale & Coriander Pesto
  • Zuchini Dumplings with Balsamic Tomato & Onion Chutney
  • Carrot Zalouk

No Excuses

We work in the most challenging of environments. A small kitchen tent in the middle of the Sahara Desert with crazily excessive temperatures (both hot and cold) and regular winds and sandstorms. unreliable wifi, limited refrigeration, erratic stock in local shops and a neighbourhood that think we’re crazy for even trying to do what we do!!!!

It would be so easy to make excuses and serve up a luke warm tagine prepared hours early, every single night. But that’s not what you want and that’s not what we want. So no excuses here, we’ll try our best every single time and if we ever fall short, just let us know and we’ll put it right.

Lunch at Tiziri

If you stay with us for more than one night, you may have a day relaxing at the camp and in this case, you are welcome to pre-order lunch with us.

This can be in the form of a picnic which we will set up in a shady spot in the dunes or at a table inside or out. Our lunch menus at Tiziri are based more on traditional Moroccan food, predominantly tagines, skewered grilled meats, madfouna (Berber Pizza) and a variety of Moroccan salads and seasonal fruit salads.

Also available for pre-booking is a demonstration of the ancient and traditional art of making sand-bread. This is a dying art and one of the only nomads in this area to retain the skills will come to the camp (courtesy of our friends at Walking with Nomads) to demonstrate this to you and of course, to share the results.

We look forward to welcoming you to Aghlay Restaurant at Tiziri Camp and in case you wondered, Aghlay means sunset in our local language. The perfect name for a restaurant overlooking the setting Saharan sun.
